The National Restaurant Association stated that statistically "95% of restaurant profit comes from BEVERAGES!" If approximately 70% of that profit was generated by wine, then your servers SHOULD BE in the business of "drink management."
Unfortunately, servers turn-over quickly, training is too often on-the-job, and thus, wine sales & service is dismal. It is a lost opportunity for the establishment, and a disappointing experience for the customer. Nobody wins in this scenario.
